Peach Melba

Peach Melba is a dessert named for Australian opera soprano Nellie Melba.

It is made from peaches and vanilla ice cream, and served with Melba sauce, which is concocted of raspberries, redcurrant jelly, sugar and cornstarch.

It was created in Melba's honor by French chef Auguste Escoffier and first served at London's Carlton Hotel.
